Cucumber Salad

Because cucumbers are soooo cool!

Salads don’t need to be boring and they certainly do not need to look and feel the same. Most salads contain some form of lettuce, but the lettuce is not required in every salad. There seems to be a growing abundance of cucumbers in the markets around Lagos these days and I’ve been thinking of what more to do with them, other than slice them in cubes and add to famed lettuce. Looking at cuisines around the world, I stop on the continent of Asia. Here, they have cucumber salads, so let’s give this a try.

Cucumbers are hydrating due to their high water content. They are also packed with bioavailable minerals, vitamins and electrolytes making them ideal options for increasing daily nutrient intake. To top things off, cucumbers also contain phytoestrogens and digestive enzymes that are good for your gut. 

There are a number of ways this cucumber salad can be made. There are no set rules. The goal really is to try something new. Something simple with familiar yet different flavours.

Now on to making this dish.  You can make it as a starter, a side or the main. It’s entirely up to you.

Cumber Salad

Serves: 2 Prep Time: Cooking Time: Nutrition facts: 200 calories 20 grams fat

Ingredients

2 medium cucumbers

1/4 cup mint

½ lime, juiced

½ red chilli, finely diced

1 clove of garlic, crushed

¼ inch ginger, very finely sliced

2 tbs rice wine vinegar
1 tbs olive oil (or sesame oil)

1 tbs liquid sweetener, coconut nectar (or honey, or agave)
½ tsp salt
1 tbs crushed groundnut, to garnish

Instructions

  1. Slice cucumbers thin on a mandoline or using a sharp knife and then place them in a bowl lined with kitchen paper towel to absorb some of the moisture. You can slice them peeled or unpeeled if you desire
  2. To prepare the dressing, in a separate medium bowl whisk together the remaining ingredients, except the sesame seeds and mint leaves
  3. Place the cucumber slices in a clean bowl and pour over the dressing. Lightly mix to coat with the dressing to ensure all slices are dressed
  4. Taste and add more salt if needed
  5. Sprinkle in chopped mint and coat the cucumber further
  6. Sprinkle with optional sesame seeds
  7. Serve as desired

Notes

Best prepared a few hours before serving at the max. Prep and consume within the same day.
