If you want to add some heat and aroma to your plate, this fiery hot habanero pepper sauce is all you will need. Most Nigerians love pepper and many can’t get through a dish without it. The food just has to have some heat, not just some, a whole lot of heat. I do love heat, but sometimes it’s only after tasting a dish do I decide to add it or add more of it. This hot pepper sauce does the trick. Habanero chilli peppers are one of my favourite hot peppers to cook with. They are named after the city of La Habana in Cuba, but originate from the Amazon in South America. They do come in a variety of colours, however, red, green and orangeish-yellow are the most common colour varieties found.
Aside from the heat they provide, habanero peppers rate between 100,000 to 350,000 on the Scoville scale (source: wikipedia), they are fruity flowery fragrance that add a wonderful element to dishes that are cooked with it. In Nigeria, habaneros are seasonal and because of this I always look for ways to extend their availability throughout the year. This fiery hot habanero pepper sauce is one of many ways I do this. It’s great for adding to recipes while cooking or as a condiment adding extra heat to a dish while having a meal.
The ingredients you will need for this hot pepper sauce are simple
30 – 40 large habanero peppers
1 medium red onion
10 garlic cloves
¼ cup avocado oil
2 tbsp raw cane sugar
1 tbsp white vinegar
1 tbsp salt
To prepare the sauce you will need to
- Finely dice the red onion and crush the garlic cloves
- Wash the scotch bonnet peppers and place them in a food processor. Blend until a chunky texture is achieved, however, achieve a consistency that works for you and your planned cooking applications.
- Pour the avocado oil into a saucepan and place on medium heat. I use avocado oil for cooking as it is a high heat oil.
- Add the chopped onions and stir through for about 1 – 2 minutes, add the crushed garlic and stir for another minute
- Pour in the blended peppers, vinegar, sugar and salt and stir through for 1 – 2 minutes. Then cover the pan with a lid and lower the heat.
- Leave the pepper sauce to simmer for 20 – 25 minutes
- Once done, remove from the heat and leave to cool completely then pour into an airtight container and store in the fridge
Applications
You can add this sauce to a wide variety of dishes that you want to add heat to. Everything from rice, beans, soups and stews, to salsa and dips. You can add it during or after cooking to suit your taste. If you do make this hot sauce in large batches, it stores well in the freezer. I normally make a big batch at once and use it over the course of several months.
