Mango & cashew vanilla cream tart. Sounds quite divine! I’ve made a number of mango related tarts of recent and here is one of them.  This one comes in three parts and assembled to bring together a burst of fresh and naturally sweet flavours. I love making individual tarts because they are easy to store, and easy to serve. Mangoes are one of my top 10 favourite fruits and it’s great that it’s currently mango season in Nigeria through June. I will continue to share more mango and mango dessert recipes because we cannot waste the season. Enjoy!

Mango & Cashew Vanilla Cream Tart

Serves: 4 Prep Time: Cooking Time: Nutrition facts: 200 calories 20 grams fat

Ingredients

Mango Tart

1 ¾ cup almond meal
½  cup tapioca flour
¼  cup coconut oil, melted
¼  cup agave syrup (or liquid sweetener of choice coconut nectar, maple syrup, just not honey!)

 

Vanilla Cream

1 cup cashews, soaked

¼ liquid sweetener of choice

½ tsp vanilla

Pinch of salt

water as needed

 

Mangoes & Garnish

4 Mangoes

1 tbs lime zest

Sprigs of mint

Instructions

Crust

  • Preheat the oven to 180C
  • Place all the dry ingredients in a bowl and combine
  • Add the coconut oil and agave syrup (or liquid sweetener) and combine until you get a crumbly mixture. This should stick together when pressed
  • Pour the mixture evenly into mini tart tins (spring form pans). Note: line the pan with parchment paper if you do not have a springform pan. Press the mixture into the pan firmly to form the crust
  • Bake the crust for 15 mins in the oven
  • Remove and set aside to cool

 

Vanilla Cream

  • Place all the ingredients into a high speed blender and blend. Add water only as needed until a smooth creamy consistency is reached. The cream should be thick.
  • Remove and place in the fridge to chill before plating

 

Mangoes

  • Slice the sides of the mangos
  • Gently use a spoon to scoop out the flesh and slice evenly

 

Plating

  • Scoop vanilla cream into each tart case
  • Layer on a sliced mango
  • Sprinkle lime zest over the top and a few mint leaves to garnish
