Nigerian Beans Porridge and Plantain

Serves: 4 Prep Time: Cooking Time: Nutrition facts: 430 calories 20 grams fat

Ingredients

2 cups dried black eyed peas or brown honey beans

3-4 cups of water (or vegetable broth)

4 tbsp palm oil

1 medium yellow onion, cut in half

1 red bell pepper

3-4 fresh fresno chilies (optional)

1 - 2 scotch bonnets (sub habaneros)

1 tsp garlic powder

salt to taste

 

PLANTAIN

3 ripe plantains

salt to taste

oil for frying

Instructions

BEANS PORRIDGE

  • Soak the beans in a bowl of water for a minimum of 2 hours, preferably overnight. This makes cooking them faster and breaks down the enzyme in the beans that causes gas and bloating
  • Place the beans in a bowl of water and wash thoroughly, removing any floaters. Repeat this process once more to ensure the beans are clean and free from any grit
  • Place the beans in a pressure cooker/instant pot (if you have one) with 4 cups of water, 1 tsp sea salt and cook per instructions until al dente. 
  • Rough chop the onion and peppers in a blender (use the pulse function) or use a mini food processor
  • Heat the palm oil in a wide skillet, ensure that it does not start smoking. Then add in onion pepper mix and sauté for 3-4 minutes, stirring often. Add the remaining spices. Reduce the heat, cover the skillet and simmer the mixture for about 5 more minutes.
  • Fold in the cooked beans, along with 1 - 2 cups of water (or vegetable stock). Add sea salt and adjust seasoning as needed. Cover the skillet and simmer on low heat for another 8 - 10 minutes until the beans are soft

FRIED PLANTAIN

  • Slice the plantain on a bias and place the slices in a bowl
  • Sprinkle salt over the plantain and ensure slices are evenly coated
  • Fry plantain until golden brown

SERVING

  • Serve the beans porridge with the fried plantain (preferably) or over rice, with yam, potatoes or on it’s own with some sourdough bread.

Note: 1. Add less or more water for the consistency you prefer 2. If you prefer your plantains less sweet use just ripe plantain. The plantain can also be served boiled or baked if preferred
