I get asked on a regular basis through multiple channels about plant-based eating and how and where to start. Well, my response is most often the same. Start with your next meal. Your next food choice. It’s really that simple. Or is it? I understand how making a lifestyle change can be overwhelming for many of us, especially where food is involved. There is so much information out there online and in the media about what to and what not to eat, to the point that it can paralyse a person’s food choice decisions. That’s a full day of meals. The ebook also includes a shopping list to help set you up for success. All the recipes are pretty simple, made with ingredients you can find in your local supermarket or on online stores.
Let’s talk about starting your day with breakfast. Now, I believe that breakfast is the most important meal of the day. It gives you the boost of energy you need to go about your daily activities. For breakfast your plant-based day with pancakes. This pancake recipe is so simple because it is made by throwing all the ingredients in a blender to make the batter and they can either be baked in ring moulds in an oven or fried in a frying pan as usual. I love this recipe because it such a time saver and you can put any of your favourite toppings on these pancakes, so you can totally make them your own.
Lunch is a simple macaroni pasta salad. I love pasta in salads as they make them filling. I used gluten-free macaroni for this dish and dressed it up with loads of vegetables and herbs. The dressing is super simple to prepare as well, bringing a freshness to dish, while pulling the ingredients together.
During any day there’s always a need for a snack, right? The hunger pangs may likely happen at some point in the afternoon. Chickpeas are high in protein and excellent for taming those hunger pangs. The sweet and spicy chilli lime chickpea recipe in the ebook is super quick to prepare and gives you mouth something to savour when you begin to feel a little peckish.
Dinner is a Buddha bowl that serves up all the flavour and comfort needed to wind down a long day. It is wholesome, full of flavour, and packed with nutrients. Nigerians love their beans, rice and pepper, and this dish serves them up in a fresh new way. Made with black beans, mixed wild rice, plantains, accompanied by a flavour bursting bell pepper stir fry and topped with avocado. It honestly is the best. This meal could easily be a lunch, as well as, a dinner meal.
You cannot end the day without dessert. Even if not everyday, after a day of plant-based eating you definitely can. The apple crumble cups are easy to prepare (like all the other recipes in the ebook) and can be made in advance. The great thing about this recipe is that it uses the same cashew cream used in the breakfast pancakes recipe. Now how’s that for efficiency?
Whole Foods Plant-Based eating is centered on the consumption of whole, unrefined or minimally processed plant-based ingredients.It means that your nutrition comes from whole foods that are plant based. It is based on obtaining nutrients from fruits, vegetables, leafy greens, tuber & starches, whole grains, legumes, nuts and seeds. There are a number of reasons a person may decide to adopt this way of living and eating. The three main reasons are ethical, health, and environmental and a fourth, for some people, is spiritual. The goal with whole foods plant-based eating is to consume as many natural minimally unprocessed foods as possible. Someone who is 100% whole foods plant-based is technically vegan. There are over 30,000 varieties of plant based foods in the world and most of us only eat less than 150 of them. And 75% of us eat the same five ingredients all the time. Plant based foods are not limiting, they exist in abundance and there is so much to explore. My personal goal and advice is to keep an open mind and try something new as often as possible.
